
Hundreds of concessions stands take their place on New York sidewalks selling simple fruits to elaborate meals. The variety of carts and food preparation seem limitless. This research project focuses on the vending cart business. How vendors move their carts/wares and operate their businesses around the city. The background research will include how licenses and permits are obtained, finding the right location, purchasing food, storing food and the bottom line ($). The research will continue to focus on a specific food-type, follow their operations, identify a need or problem, and begin designing a product or service for the user.
